We roast to six named levels, from Cinnamon (lightest) to Vienna (darkest). The right choice depends on your brew method, your milk ratio, and your customer.

The six levels

Three rules of thumb

  1. The more milk, the darker the roast. Milk mutes acidity and rewards body — City and darker cut through.
  2. Light roasts show origin; dark roasts show roast. If you paid for a top screen size and a special estate, don't bury it under a Vienna.
  3. Grind and roast interact. Darker roasts are more brittle and grind finer at the same setting — recalibrate when you switch.
